Zucchini Noodles and Pasta Sauce

Zucchini noodles are the best! They aren’t pasta, but they are a nice low carb alternative. Plus this way you can eat it every night and be healthy! You need a spiralizer for this, but they are very cheap and you can pick them up from almost any home-wear store. This is a basic pasta sauce with a vegan twist, but you can pour pretty much anything over it. I have friends who make pesto and cheesy sauces... Go nuts!

 

Ingredients

  • Two zucchinis, spiralized

  • One large tin of tomatoes

  • Half a tin of tomato paste

  • One tablespoon olive oil

  • One onion, chopped

  • Handful of largely diced mushrooms

  • Two cloves of garlic, chopped

  • Teaspoon of capers

  • Half of a lemon juiced

  • ½ teaspoon chopped fresh oregano

  • ¼ cup chopped fresh basil

  • salt and pepper to taste

 

Steps

1. Sautee garlic and onion in a pan with sides with olive oil, until nearly translucent

2. Add in mushrooms, sautee until cooked

3. Add the rest of the ingredients except basil

4. Let simmer for about 20 minutes, for the sauce to reduce

5. Add basil

6. Pour over spiralized zucchini
